The mod of the game that takes you will note that you were taken, and therefore the list mod will know to remove you the next time he updates.
first game, is it alright if a go on holiday for a week at the end of january, or do i have to wait till then to apply for a game?
If you tell your mod you're going to be away, depending on the circumstances they may not need to replace you. But being away for seven days is usually not a good thing.

I've actually played now...3 newbie games on this site, but I abandoned one and another was mod-abandoned. I only count the most recent one when it comes to experience and SE'ing and IC'ing and whatnot.

The SE spot is there more for people who are not raw Newbies than it is for people who are qualified to teach. Looking over your 3 games, you have enough experience on how the games are played on this site to qualify you as an SE, so that's where I'm putting you.
