For the hold 'em it'll be simple: 1000 chips - 100/200 blinds with them doubling every 3 hands. It'll be no limit.
Chess games take some time, so I think the poker should, too. I'd suggest no-limit. Start with 1,500; blinds start at 10/20. Increase every 6 hands, but not doubling. If you'd like, I'd love to make a structure for the game to last about as long as a chess match would.

Not true. Blinds are used in heads-up play. The dealer pays the small blind; the other pays the big blind. Dealer has to act first pre-flop because he gets to act last on every other street.

I will agree that by the time you're watching a final table, antes are being played
ALONG WITH
the blinds.

@Max: Typical poker has the dealer pay the small blind. The reasoning is that the dealer acts last in every other round, so you are forcing him to act first pre-flop. No, it's not a big issue, and I'm okay with it either way.

This is taken directly from PokerStars' Heads-Up Sit-and-Go's:

Starting chips: 1500. New level every 5 hands.

I would bet that most games won't get past level 5, as long as there isn't a lot of hands won pre-flop. A couple of the games *might* get to level 7 or 8 before they're decided.
