I'm still figuring out single player. I've managed about 5 small houses on a stack, got a gold broadsword, iron pickaxe, axe, and hammer. Got 3 NPCs, the merchant, demo guy, and nurse. (Along with the guide.)

... so that's how they suck you in.

Eye of Cthulu spawns at random after destroying your first shadow orb or by using the suspicious lens you get by crafting

Yeah, I actually had to look up the wiki to find out that I had two demon forges in a body of water underground. I'll have to go find that again and forge my lenses into that.

Edit: Oh shit, 2800HP? That's gonna take a while...

I don't think it has anything to do with shadow orbs. I think it's if you have at least 200 HP. I had it spawn on me in my single player and haven't broken a shadow orb.

I can't kill the Eye in my single player game. I've tried 3 or 4 times and just die too easily, even with a full set of silver armor and a gold broadsword + enchanted boomerang

Try mining up for a Gold Armour, and Silver/Gold Bow. [and Flaming Arrows]

(Bow > Sword when taking on Eye)

And the boomerang takes too long to deliver enough damage.

I never said 3 orbs. It used to be at random after destroying your first orb, but now they've changed it to goblin army

And now I get the Eye down to 1600 HP pretty quickly, and a second one spawns, causing me to die pretty quickly. Stupid single-player.

Oh, I have a couple MP servers I play on already. I was doing some SP because the people I play with weren't around.

Make you an arena where you can dodge and run, use bows, and if you really can't beat it, start searching for an underground jungle or some shadow orbs.

I can't kill it either, but I only have iron armor, gold broadsword, and I actually used shurikens and got myself ruined by it's 2nd form.

Potion sickness doesn't last that long. If you take 200 damage before potion sickness wears off you need to work on your dodging

I mean, I know I had a poor area for fighting the eye since it always just hopped in on me at a random point during the night, but it's not that easy to dodge.
