Why? You literally get less Spaghetti.

That's...not how conservation of matter works.

I think the act of breaking the noodles is likely to cause some minute particles to become detached from any of the noodle pieces and thus no longer a part of either definition of spaghetti. Therefore, breaking the spaghetti leads to less spaghetti mass = less spaghetti.
